This is a great starter which looks and tastes naughty but is completely NC !!
Cook your jackets in microwave and let them cool.
Cut potatoes in half and scoop out centres ( retain for fish cakes, Shepherd's pie etc etc)
Cut skins into wedges and place on a baking tray sprayed with Fry light, spray skins and sprinkle with salt and pepper, paprika etc - choice up to you, bake until crispy.
Serve with any NC filling
I like to use Salas and a garlic mayo type of filling.

SALSA
finely chop 1/2 chilli and 1 clove of garlic, then chop 3 tomatoes , 1/2 onion , 1 inch piece of cucumber mix together and leave for half an hour . you can put in coriander if you like it .
GARLIC 'MAYO'
Mix some freshly chopped garlic and parsley with ELF and soften with a little skimmed milk.
