Turkey and Cranberry Salad
Serves 4
Full Choice 3½ pts per serving
No Count ½ pt per serving (mayonnaise& cranberry
sauce)
450g cooked turkey cut into bite size pieces
4 tbsp very low fat fromage frais
2 level tbsp low cal mayonnaise (2pts)
1 level tbsp cranberry sauce(½ pt)
salt & pepper
1 bunch watercress, washed
2 stalks celery with leaves, stalks chops, leaves
reserved
2 eating apples, chopped
1 tbsp lemon juice
1 large green pepper, chopped
Mix the cranberry sauce with the fromage frais and
mayonnaise and then mix into the turkey. Cover and chill for 30 mins.
Trim the watercress and place in a large bowl.
Add the celery. Toss the chopped apple into the lemon juice and add to
the bowl with the green pepper.
When ready to serve, pile the veg onto serving
plates and top each with a portion of the turkey mixture.
Garnish with celery leaves.
