Fresh Broad Been Salad


Fresh Broad Been Salad (Salata me Koukia Freska)

whole recipe 2½ points for no count
3 glasses fresh broad beans boiled and drained (½pt glass)
3 glasses coriander leaves finely chopped
1.5 glasses celery stalks finely chopped
2 garlic cloves chopped
lots of lemon juice
salt
3 teaspoons of olive oil (2½pts)

Cook the beans in boiling water until just tender,   place in a strainer, rinse to cool quickly and drain.   Put in a salad bowl add the lemon juice, salt garlic and olive oil, leave aside for 1.5 hours.   Just before serving add in the coriander and celery and toss.
