BEAN SALAD


BEAN SALAD

Serves 4
Points per recipe 15
Points per serving 4

200g dried haricot beans
2 tomatoes, chopped
1 green pepper or chilli, chopped
1 onion, chopped
handful of parsley chopped
salt & pepper
2 hard boiled eggs
3 radishes, sliced
1 tbsp red wine vinegar
1 tbsp olive oil
4 black olives to garnish

Soak the haricot beans overnight, drain and place in a pan with plenty of water.  Bring to the boil and simmer until tender.  Drain and rinse in cold water, drain again.
Place in a serving dish and add the tomatoes and pepper or chilli.
Add the onion and parsley.
Cut the eggs lengthways into wedges.  Arrange the eggs and radishes on top of the salad.
Mix vinegar and olive oil and pour over the salad.   Garnish with olives and serve.

Can use any type of white bean in this dish.
