WATERCRESS SOUFFLED RAREBIT

Serves 1
Points 5

1 egg, separated
40g reduced fat Cheddar
30g watercress, chopped
dash worcestershire sauce
2 slices WW bread or Nimble

Mix egg yolk, cheese, watercress and Worcestershire sauce.
Whisk the egg white until stiff and fold into cheese mixture.
Lightly toast the bread on both sides and spread the egg mixture over the top of each slice.  Place under a medium grill for about 3 mins until golden.  Serve.
