CRISPY POTATO SKINS

Serves 4

4 baking potatoes approx 225g each
salt

Scrub the potatoes and bake in a preheated oven at 200ºC/400ºF/Gas 6 for about 1 hour until tender.

Cut the potatoes in half length wise and scoop out most of the flesh, leaving a thin layer of potato around the inside of each shell.  Cut in half again making 16 quarters altogether.

Season the shells with salt and spoon in the filling of your choice.  (Counting points for it if necessary)
