Grape Salad

1 crisp
Romaine lettuce, washed
8 spring
onions, chopped
1 red pepper,
diced
12 cherry
tomatoes, halved
115g each
seedless white and black grapes, halved if large.
Dressing
1 tbsp
chopped fresh mint
2 tbsp low
fat plain yogurt
1 garlic
clove, crushed
1 tbsp lemon
juice
salt &
pepper
Arrange the
lettuce in the base & around the sides of a serving dish.
Scatter with
spring onion, red pepper and tomatoes. Add the grapes.
Combine the
dressing ingredients and drizzle over the salad. Serve chilled
