MEDITERRANEAN VEGETABLE SALAD


MEDITERRANEAN VEGETABLE SALAD

Serves 2
Points per serving 4

½ yellow pepper, deseeded & cut into chunks
1 small courgette, sliced thickly
1 small onion, sliced
2 tsp olive oil
2 tomatoes, quartered & deseeded
2 olives in brine, pitted & sliced
3 tbsp vinaigrette dressing
¼-½ tsp chilli sauce
½ tsp mixed dried herbs
300g cooked pasta
6 basil leaves torn

Toss the pepper, courgette & onion in the oil.  Heat a non-stick pan and when it is hot, stir fry the veg for 3-4 mins until they begin to soften & brown.  Remove pan from heat.
Add tomatoes & olives.
Mix vinaigrette with chilli sauce and herbs.  Season & drizzle over the veg.
Fold the pasta & basil leaves into the mixture.  Divide between two bowls and chill until required.
