WARM POTATO & TUNA SALAD


WARM POTATO & TUNA SALAD

Serves 1
Points per serving 4½

240g new potatoes, scrubbed
3 spring onions, trimmed & finely chopped
1 tbsp chopped fresh parsley
1 tsp lemon juice
2 tsp tarragon or cider vinegar
1 tsp olive oil
1 x small tin (100g) tuna in brine, drained
salt & pepper

Cook potatoes for 15 mins or until tender.
While potatoes are cooking, mix spring onions, parsley, lemon juice, vinegar & olive oil.  Drain potatoes and place in serving bowl.  Add dressing & toss well.
Gently mix in the tuna.  Season to taste.
Garnish with lemon wedges and serve warm.
