Melon, Mango & Baby Leaf Salad with Blue Cheese

150g low fat plain yogurt
1 tbsp clear honey (1pt)
1 tsp finely grated fresh root ginger
1 x 120g bag baby leaf salad
1 tbsp lemon juice
2 med slices cantaloupe melon, deseeded and cut
into chunks
50g seedless grapes
1 large mango, peeled and chopped
50g blue Stilton cheese, crumbled (5½pts)
1 passion fruit
Make the dressing by stirring the yogurt, honey and
ginger together.
Toss the salad leaves in the lemon juice, then
arrange them on 4 plates. Divide the melon, grapes and mango between
them, then crumble the cheese over the top.
Drizzle the salads with the dressing, then scatter
with the seeds and pulp from the passion fruit.
Serve at once.
