150g can tuna
in brine, drained
2 tbsp low
fat mayonnaise
2 spring
onions, sliced
200g can
sweetcorn, drained
2 tbsp
chopped gherkins or capers (optional)
2 medium
pitta breads
salad leaves
salt & pepper.
Mix all the
ingredients except the pitta breads and salad leaves and season.
Warm the
pitta breads and split them. Divide the salad leaves between them, add
the tuna & serve.
Tip: This
filling could be used for a jacket potato or a wrap. The points for the
filling on its own is 2½ per serving. So add a jacket spud of 2½ pts or a
wrap 1½ to 3 pts depending what kind you get. Or use to fill you
sandwiches or on toast.
