Crispy Peking Mock-Duck

1 can Mock-Duck
(from Holland & Barratt or chinese supermarkets) (3½ pts)
10 chinese
paper thin pancakes (5pts)
4 tbsp Hoi
Sin or Plum Sauce (4pts)
finely
shredded spring onions & cucumber
Drain the
mock duck and cut into small pieces. Place on a griddle, over a medium
heat for 30-45 mins, turning halfway through. This makes it really dry
out & turn crispy.
Meanwhile,
slice the onions & cucumber & place sauce in a dish.
Warm the
pancakes for 10-20 seconds in the microwave.
Serve Chinese
restaurant style, assembling the pancakes yourself at the table.
