SWEET POTATO & TOMATO SOUP
Here's what I did with my sweet potatoes - thought you might
like the recipe.
2 leeks, trimmed washed and sliced
2 tsp butter
600g sweet potatoes, peeled and thickly sliced
1 x 400g tin chopped toms
1 tbsp tom puree
1 beef stock cube
approx 600ml water (until it looked right!)
1 red and 1 yellow pepper, roasted, peeled and deseeded, then cut into strips
plain yoghurt
Melt the butter in a large pan, add the leeks, toss around then add 2 tbsp water and seasoning. Cover and cook gently for about 10 mins. Meanwhile cook the sweet potatoes in salted boiling water until tender.
Take the lid of the leeks and increase the heat to evaporate any juices. Add the tomatoes and puree and simmer briskly for a couple of mins. Add the drained sweet potatoes and the stock and water. Cook for about 5 mins. Liquidise in batches until smooth and check the seasoning. Add more liquid if the soup is too thick. Add roasted pepper strips and a drizzle of yoghurt to each bowl to serve (the roasted peppers really do make it special)
