Jelly Fluff


Jelly Fluff

Serves 4-6

1 pack sugar free jelly
grated rind & juice of 1 lemon
2 egg whites

Dissolve the jelly in 300ml boiling water.  Stir in the lemon rind & juice and make up to 425 ml with cold water. Chill until on the point of setting.

Add the egg whites to the jelly and whisk, ideally with an electric whisk until light and fluffy.  Pour into individual dishes and chill until set.

The flavour will depend on you!

2 low fat or diet peach yogurts.
1 packet strawberry sugar free jelly

Put yogurt in a large bowl and whisk till  slightly fluffy.

Make up jelly but with only half water, let cool add to the yogurt mixture and using an electric whisk beat for about ten minutes till same consitency as Angel Delight, then place in the fridge to set.


Experiment with the flavours using different yogurts and different flavour jelly.  As long the yogurt is low fat or diet it will be core.
