Brazilian Rice


Brazilian Rice

Serves 6

Core recipe

3 onions, chopped
frylight
8 fresh tomatoes, chopped
1 tsp salt
100g brown rice
750ml water
1 mango, peeled and chopped


In a covered saucepan, saute onions in frylight for 5 minuts on medium-high heat, stirring frequently.  Add tomatoes and salt, continue to cook for further 5 minutes.  Stir in rice and water, cover and bring to boil.  Reduce heat and simmer for about 40 minutes, until rice is tender.  Just before serving, add chopped mango and stir through.
