Thick Three Bean Soup

Thick Three Bean Soup

1 tin Red Kidney beans
1 tin canellini beans
1 small tin black eye beans
1 large carrot finely chopped.
2 medium onions tinely chopped
2 tins chopped tomatoes
1 courgette chopped
3 sticks celery chopped
2 pints of stock 
1 tsp oregano
1 clove garlic crushed
salt and pepper to taste


Place all in a pan and bring to the boil.  Turn down the heat ad simmer gently until the veg are cooked, about 30 mins.  Season and serve.
