One Pot Goulash

One Pot Goulash

Serves 2

1 tsp caraway seeds, crushed
300g new potatoes, halved if large
low fat cooking spray
250g lean braising steak cubed
1 large onion chopped
1 garlic clove crushed
1 red pepper de seeded and cut into chunks
½ tsp hot smoked paprika (see note)
400g can chopped tomatoes
1 beef stock cubed dissolved in 200ml boiling water
1 tbsp chopped dill
2 tbsp low fat natural yoghurt
salt and freshly ground black pepper

Preheat oven to Gas 4 / 180ºC / fan 160ºC.

Spray a lidded casserole dish with oil and fry the beef until browned on all sides remove from casserole set aside.

If nessecary spray pan again with oil. Add onion, garlic and pepper and cook for 2 mins. Return beef to the pan and stir in the paprika, caraway seeds, tomatoes, stock and potatoes.

Cover the casserole and place in the oven for 1hr 45min stirring occasionally.

Before serving check seasoning stir in the chopped dill divide between 2 warmed large bowls and top each with a tbsp yoghurt.

Serve with chopped cabbage and carrots

Note:
Hot smoked paprika is better the normal sweet its hotter and adds a lovely depth to the dish if using standard paprika use 2 tsp
