Penne with Squash, Spinach & Bacon

Penne with Squash, Spinach & Bacon 

Serves 4


1 butternut squash, cut into 1cm (½") cubes
250g bacon medallions, chopped
2 garlic cloves, crushed
1 x 250g pack fresh spinach, roughly chopped
300g wholewheat penne pasta

Heat a large pan and spray with frylight.  Cook the squash cubes and bacon for 6-8 mins until almost tender.  Add the garlic and cook for 1 more minute then stir in the spinach and cook 2 mins.

Meanwhile cook pasta according to pack instructions.  Drain.


Stir the squash mixture through the pasta & serve.
