Beef & Pumpkin
Curry
Serves 4
600g peeled & chopped pumpkin or butternut squash
450g extra lean minced beef
1 large onion, sliced
1 clove garlic, finely chopped
1 large cooking apple, peeled, cored & chopped
1 tsp ground turmeric
1 tsp ground coriander
1 tsp cumin seeds
¼ tsp chilli powder
200ml stock
Heat a large flameproof casserole on a high heat. Put
in beef and stir until browned. Lower heat and add onion and
garlic. Cook until onion is soft. Mix in pumpkin or squash, apple,
spices and stock. Bring to the boil. Cover and cook on a low heat
for 1 hour.
