Chachouka

Chachouka

Serves 4

250g onion,chopped
2 red or green peppers, de-seeded & chopped
2 chillies
200g tomatoes, chopped
4 large eggs
300ml stock
chopped fresh parsley

Put onion and peppers into a pan with the stock and bring to the boil, cook for 5 mins, then simmer for 20-30 mins or until the veg ate tender and syrupy.

Add the chillies and tomatoes and cook for 5 mins, season to taste.

Pour into an overnproof dish.  Make 4 hollows into the veg and break an egg into each hollow.

Bake Gas 4 for 10-15 mins or until the eggs are cooked.


Sprinkle with parsley and serve.
