Meat and Egg Loaf

From Slimming World 100 original recipes

Core recipe

340g extra lean mince beef
1 small onion finely chopped
1 level tbsp. tomato puree
freshly ground black pepper
1 tbsp. Worcestershire sauce
pinch grated nutmeg
pinch allspice
pinch dried thyme
1 level tsp. finely chopped parsley
1 large egg
2 hard boiled eggs

Preheat oven to 190ºC, 375ºF, Gas 5.

Mix all ingredients together, except the hard boiled eggs.  Shape into a flat rectangle and place the hard boiled eggs down the centre.

Roll the meat mixture around the eggs using fingers.  Place in a small loaf tin, cover with foil and cook for 45-55 minutes. Remove the foil and cook for a further 10 mins. to brown the top.


Serve with free green vegetables or cold with salad.
