Kidney Bean Stew

1 tblsp olive oil from allowance or frylight
1 large onion chopped
1 large red pepper chopped and de-seeded
2 carrots diced
2 leeks or courgettes sliced
2 celery sticks sliced
175g/6oz mushrooms sliced
4 tomatoes, skinned and quartered OR 1 large tin chopped tomatoes
1 425g tin kidney beans drained and rinsed
1/2 teaspoon paprika
salt and pepper
Heat the oil in a large saucepan. Add onion,carrots,leeks or courgettes, celery
and peppers.
Cook gently for 10 minutes, covered then add mushrooms, tomatoes, kidney beans
and paprika. Salt and pepper to taste.
Continue to cook for 10-15 minutes then serve.
