Simple Egg Curry

Simple Egg Curry

Serves 4

frylight spray
½ tbsp cumin seeds
2 large onions, chopped
1" piece fresh ginger, grated
1 clove garlic, crushed
2 tbsp tomato puree
½ tsp turmeric powder
½ tsp chilli powder
1 tsp garam masala
8 large eggs, hard boiled, peeled and halved
3 tbsp very low fat fromage frias, mixed with a little milk to a pouring consistency
fresh coriander, chopped

Heat a large frying pan and spray with frylight. add the cumin seeds, as soon as they darken, add the onions and cook until softened, about 10 mins.

Add the ginger, garlic and tomato puree and stir to combine.  Add the spices and mix well.


Gently lay the egg halves onto the sauce and pour the fromage frais over.  Heat through and serve, sprinkled with coriander.
