Quick Beef Stroganoff

Quick Beef Stroganoff

Serves 1

low fat cooking spray
110g lean beef stir fry, cut into thin strips
75g chestnut mushrooms, sliced
4 spring onions, sliced
pinch ground paprika
75ml beef stock, made using 1/4 stock cube
2tbsp very low fat plain fromage frais
salt and freshly ground black pepper

Heat a non stick frying pan on the hob and lightly coat with low fat cooking spray. Add the beef, followed by the mushrooms and spring onions. Stir fry for 3 mins. Sprinkle in the paprika then pour in the beef stock.

Bubble rapidly for 30-60 secs until the liquid is reduced and syrupy.

Remove the pan from the heat and leave for about 1 min, then stir in the fromage frais and seasoning to taste.


Serve with wholewheat pasta, brown rice, jacket potato or new potatoes.

Vegetarian version omit beef and add 250g mixed mushrooms and use veg stock, points value of ½. Serve on bed of tagliatelle 60g dried weight for extra 3pts
