Mediterranean Pilaff

Mediterranean Pilaff

Serves 4

450g extra lean minced beef
1 small red onion, sliced
1 each red, green and yellow pepper, deseeded and diced
1 courgette, thickly sliced
200g long grain brown rice (dry weight)
1 tsp thyme
450 ml veg stock

Heat a large non-stick pan.  Add the mince and onion and cook over medium heat for 5 mins until the mince is starting to brown.  Add peppers and courgette and cook for 3 mins.  Stir in rice and thyme, pour over the stock and bring to the boil.

Turn heat down low, cover and cook 18-20 mins until the rice is cooked through and the liquid is absorbed.


Serve straightaway.
