One Pan Dinner



One Pan Dinner


Core recipe 

Points per serving: 5½

Serves 6

½tsp dried tarragon
2 tbsp tomato puree
500g extra lean minced beef
1 clove garlic, crushed
1 bay leaf
100g brown rice, uncooked weight
½ tsp dried thyme
1 onion, finely sliced
3 tbsp spring onions, finely chopped
1 tbsp fresh parsley, finely chopped
500ml beef stock
200g cabbage, finely shredded
150g carrots, grated
frylight

Spray a large non-stick pan and stir fry the garlic and onion over low heat until golden.  Add mince and fry until brown.  Add bay leaf, thyme, tarragon, parsley and spring onions.

Add rice, stock and tomato puree.  Reduce heat, cover and simmer over low heat for 30 mins.

Add cabbage & carrots and cook just to mix & slightly soften the veg.

Serve immediately.
