Balkan Omelette

Balkan Omelette

Serves 3-4

Frylight
1 small onion, chopped
1 garlic clove crushed
8oz extra lean minced beef
1 tsp tomato puree
1 tsp dried coriander
2 tbsp water
1/2 each red and green pepper, finely chopped
3-4 eggs
a little paprika
salt and pepper


Fry the onion and garlic in Frylight until soft.
Add the meat.
When it has browned cook for 2 minutes.
Add tomato puree, coriander, water, most of the peppers and salt and pepper.
Cover and simmer for 15 minutes.
Break the eggs over the surface and cook for 4-5 minutes.
Sprinkle a little paprika over the egg yolks and scatter on the remaining peppers.
Serve.
