Butter Bean Bake
This will serve 4 and will cost you 1 propoint per serving if you are following filling and healthy
1 onion, chopped
1 carrot, chopped
1 pepper, chopped, any colour
1 clove garlic, chopped
2 x 400g tins butter beans, drained
1 x 400g tin chopped tomatoes
50g WW brown Danish, made into crumbs
50g grated half fat cheddar (4pps)
Heat oven to Gas 4/180ºC
Gently fry the onion, carrot, pepper and garlic in frylight or oil from your allowance.
Add the butter beans and tomatoes and simmer for 20
mins.
Mix the breadcrumbs with the cheese. Add herbs if you like.
Transfer bean and tomato mixture to casserole dish, sprinkle breadcrumb mixture over and cook in oven for approx 15 mins.
