Cod and Spinach Masala

Cod and Spinach Masala

Serves 4

Points plan 2½ pts per serving

1 tbsp sunflower oil from allowance
½ tsp mustard seeds
1 large onion, peeled & diced
1 tsp garam masasla
½ tsp turmeric
2 cloves garlic, crushed
2cm piece fresh ginger, peeled & finely diced
3 large tomatoes, chopped
600g cod loin cut into large chunks
200g baby spinach leaves
ground black pepper

Heat oil in a large pan.  Add the mustard seeds and when they start to pop add the onion and saute for 2-3 mins.

Stir in the spices, garlic and ginger and cook 1 min.  Add tomatoes and cook 1-2 mins.

Add cod and cook, stirring gently got 4-5 mins.

Gently stir in the spinach and cook until it wilts.

Season to taste and serve with brown rice
