Bacon, Onion and Potato Hotpots

Bacon, Onion and Potato Hotpots

Serves 4


4 medium potatoes, thinly sliced
1 large onion, thinly sliced
2 veg stock cubes dissolved in 600ml hot water
4 lean back bacon medallions, cut into 4
salt & pepper
a few thyme leaves (optional)

Preheat oven to 190'C, 375'F, Gas 5.  Grease 4 individual dishes with spray oil.

Starting with potatoes, layer the potatoes & omiom into the dishes, seasoning with salt & pepper.  Pout in the stock.

Transfer to the oven & bake for 40 mins or until the potatoes are just tender.

Top each dish with 4 pieces of bacon & return to the oven for 10 minutes or so until the bacon is crispy.

Serve garnished with thyme, and with lightly cooked cabbage
