Spicy Hot Potatoes

Spicy Hot Potatoes

Great as a buffet nibble

Makes 20

20 new potatoes (approx 500g)
Fry Light
1 garlic clove, crushed
1 small red chilli, sliced
½ tsp ground cumin
½ tsp ground coriander
2 tbsp freshly chopped coriander


Put the potatoes in a roasting pan and spray with Fry Light.  Sprinkle the garlic and chilli over the potatoes with the cumin and ground coriander.  Bake at Gas 6/200ºC/400ºF for 30 mins.  Remove from the oven and toss in the coriander.  Serve on cocktail sticks.
