Cod with Green Lentils

Cod with Green Lentils

2 x medium skinless and boneless cod fillet.
1 x onion
1 clove of garlic
1 x lemon
1 x tin of green lentils
1 x tin of chopped tomatoes
1 x handful of chopped parsley
salt and pepper to taste
1 x spritz of spray oil



Season cod with salt and pepper and wrap in foil. Put in oven for 15 mins at 180ºC./Gas 4

Chop onion and sweat in pan until soft. Add garlic and stir for 1 min before adding lentils and tomatoes.

Simmer for 10 mins then grate the zest of the lemon into the mixture. Add the parsley just before serving and season to taste. Serve with the cod.
