Lemon-braised Potatoes 

Original points recipe from the WW community.  Recalculate for your plan.  I do remember making these back in the day and they were delicious.  A bit like the potatoes you get in Greece when on holiday.

300g baby new potatoes, halved lengthways
½ teaspoon grated lemon zest plus 1 tablespoon juice
300ml vegetable stock
1 tablespoon flat leaf parsley, chopped
1 heaped teaspoon capers, rinsed and chopped, optional



Place the potatoes in a small saucepan with the lemon juice, stock and a pinch of salt. Cover and bring to the boil, then simmer, with the lid slightly ajar, for 12-15 minutes, until they feel quite tender to the point of a knife. Remove the lid, increase the heat and allow the liquid to bubble down until it has almost all evaporated and you are just left with a tablespoon or two of syrupy juices to glaze the potatoes (this will take 8-10 minutes). Toss in the remaining ingredients, add a good grinding of pepper and keep warm.   




Notes
Because they are baby potatoes, halved lengthways, you get a lot more on your plate than you would imagine for this weight
