Jamaican Beanpot

Jamaican Beanpot

Serves 4

Points per serving: 5½

1lb lean braising steak, diced
1 squash ( about 1lb) pumpkin, butternut squash etc
1 medium onion, chopped
1 green pepper, de-seeded and sliced
1 tbsp paprika
2 cloves garlic, crushed
1 1" piece fresh ginger, grated
1 14oz can chopped tomatoes
4oz baby sweetcorn ( fresh, frozen or canned)
8oz beef stock
1 15oz can chick-peas, drained
1 15oz can kidney beans, drained
salt & pepper

Fry the beef without fat in a large flameproof casserole, stirring well to seal all the sides.

Stir in the squash, onion & pepper and cook for a further 2 mins. Add paprika, garlic and ginger.


Stir in the tomatoes, corn and stock,bring to the boil. Cover and simmer for about 1 hour until tender. Add the chick-peas and beans and heat thoroughly. Adjust seasoning to taste.
