Thai Style Chilli Omelette

Thai Style Chilli Omelette

Traditionally this is street food breakfast in Thailand

2 x Thai Birdseye Chilli (red or green), chopped finely. (or to taste)
Splash Thai Fish Sauce
2 x Spring Onions Finely Chopped
Olive Oil
2 Eggs
Salt & Freshly Ground Black Pepper

Whisk the eggs together and season slightly in a bowl. (You do not need too much salt as you get that from the Fish Sauce)

Heat a small frying pan with oil.
Add the spring onions and chilli. Cook on medium heat for a few seconds and then splash the over the fish sauce. (This may sizzle a lot)
Pour the beaten eggs over the chilli and spring onions and shake the pan so the mixture coats evenly. Leave to cook for a few minutes.
Serve hot on warm rice if you want.
