Ratatouille

Ratatouille

1 onion chopped                  
2 cloves garlic chopped
1 red pepper chopped          
Frylight or oil from allowance
2 courgettes chopped           
1 aubergine chopped
400g can tomatoes with basil
black pepper

Gently fry onion, garlic and pepper in Frylight for 10 mins.

Add courgettes and aubergine, using more Frylight, cook for further 10 mins.

Pour in tomatoes and season with black pepper.

Cover and simmer gently for 40 mins.


Serve hot or cold.

Great over pasta or jacket potatoes.
