Sweet Potato & Spinach Curry

Sweet Potato & Spinach Curry

300ml stock
1lb10oz sweet potato peeled chopped into chunks
1 onion sliced
8oz spinach
1 tsp very lazy garlic or 1 garlic clove crushed
1 tsp chilli powder
1 tbsp curry powder
4 tablespoons of chopped tomatoes

Put stock in a pan with onion and sweet potato and cook for 4 or 5 mins.

Add all ingredients except the spinach and cook for 10 mins till sweet potato is soft.

Add spinach and cook till wilted.

Serve with brown rice.
