Mushroom, Bacon, Tomato and Courgette Pasta

Mushroom, Bacon, Tomato and Courgette Pasta

1 small onion, chopped
2 garlic cloves, crushed
Bacon medallions, chopped
mushrooms
cherry or vine tomatoes
1 courgette
100ml chicken stock
400g can chopped tomatoes
salt and freshly ground black pepper
Oregano
340g dried wholemeal pasta
Balsalmic Vinegar
1 to 2 teaspoons of sweetener
Spray Oil


Cook you pasta according to the instructions on the pack.


Spray a frying pan with some spray oil


Add the onion, garlic and bacon and cook until lightly browned.


Add the mushrooms, courgette and tomatoes and cook for a further few mins.


Add stock, can of chopped tomatoes,a splash balsamic vinegar, sprinkle of oregano and sweetener.


Reduce heat to simmer until most of liquid has been absorbed into veggies.


Stir in the cooked pasta and season with salt and pepper.
