Gingered Swede

Gingered Swede

1lb swede         
4 tbsp water
salt         
freshly ground black pepper
1/2 oz low fat spread    [aprox 3 sins]   
2 tbsps fresh ginger, peeled and chopped into very fine strips

Cut swede into small cubes, place in a bowl with the water, salt and pepper.

Loosely cover and microwave on high for 10-15 mins until tender, stirring twice.

Drain well and mash or puree with a food processor, with the low fat spread.

Stir in the ginger.

Reheat for 1- 2 mins. if necessary.


Serve hot.

Another way to cook swede is.....

Put it on a plate and into the microwave whole. Cook 10-15 minutes, depending on size. Remove from microwave, cut top off and scoop the cooked swede out of the skin.  Mash and use as before.
