Courgette
and Mint Frittata

2 courgettes
1 red pepper
1 garlic clove
Fry Light or oil from allowance
4 eggs
2 tbsp fresh chopped mint
Salt and black pepper
Thinly slice the courgettes, peel, de-seed and roughly dice the red pepper and crush the garlic.
Spray an 8in non-stick frying pan with Fry Light and add the courgette, pepper and garlic. Fry, stirring continuously, until the courgette is browned.
In a bowl beat the eggs, add the mint and season well. Pour the egg mixture over the vegetables in the pan, reduce the heat to medium low and cook for 5-7 minutes or until the bottom is set.
Preheat the grill to high and grill the frittata for 3-4 minutes or until it is set and golden brown.
Remove and leave to cool. Chill until required and serve cut into wedges.
This would also be nice with some frozen peas in it. Add them with the courgettes and pepper.
