Cod and Crushed Sweet Potato

Cod and Crushed Sweet Potato

100g sweet potatoes, peeled and cut into chunks
100g firm white fish like cod or coley or haddock
1 teaspoon of grain mustard
Tablespoon of fresh parsley chopped
Finely chopped spring onion
Teaspoon of olive oil
Salt and pepper
Green salad

Boil sweet potato until soft(you can use ordinary potatoes if you prefer). 

Pre-heat grill to maximum. 

Season cod fillet with salt and black pepper and place on baking tray under the grill for eight minutes or until cooked, turning once.

Meanwhile using a fork, crush the cooked potatoes and add the grain mustard, parsley, spring onion, olive oil and a little salt and pepper to taste. 

Pile the sweet potato mash onto a plate. Put the cod on top, add a squeeze of lemon juice and serve with a side salad of your choice.
