Potato, Basil and Pea Soup

Potato, Basil and Pea Soup


1 medium onion
1 medium potato
1 tin of tomatoes (400g)
1 cup of frozen peas (225g)
1 cup of water
1 Vegetable stock cube
fresh basil


Thinly slice the onion and dice the potato Pour the tinned tomatoes into a saucepan and heat gently Add the water and vegetable stock Mix in the potatoes, onion and frozen peas and bring to the boil Lower heat and simmer for 30-40 minutes Season with salt, pepper and some fresh basil.
