Warm Lentil & Brown Rice Salad

Serves 4

Points plan 5 pts per serving

Core recipe

150g puy lentils (dry weight)
150g brown rice (dry weight)
2 small red onions
100g lean back bacon
100g pack herb salad
100g cherry tomatoes, halved

your choice of salad dressing (points not included in above)

Cook lentils in chicken stock or water.
Cook rice in a separate pan according to pack instructions.
Fry onions and bacon in a dry non-stick pan.
Drain lentils and rice, mix bacon and onions into them.
Stir in herb salad and tomatoes.
Dress as you wish and serve.
