Balsamic Chicken with Sweet Potato Chips

2 medium skinless chicken breast, uncooked
4 tablespoons Balsamic Vinegar
2 spring onions
1 medium courgette
4 spray Fry Light
3 clove garlic
1 fresh green or red chilli(s)
1 teaspoon dried mixed herbs
2 medium sweet potatoes
1 can of chopped tomatoes

Pre heat the oven to a medium heat, peel sweet potato
& chop into chips. Then put the sweet potato on a
roasting tin, spray with fry light and put in the oven.
Chop up the chilli, garlic & spring onion and chicken
breast. Spray a pan with fry light and add the garlic,
chilli & spring onion & fry for about a minute on a
medium heat, add the chicken to the pot & brown all over,
add a tablespoon of the balsamic vinegar at this stage
to stop the chicken sticking. When the chicken is brown,
add the can of chopped tomatoes and the chopped courgette
and the remaining balsamic vinegar, you may wish to add
less or more balsamic vinegar depending on personal taste.
Add the mixed herbs & season to taste.
Let the pot gently simmer for about 10 mins and serve with
the sweet potato chips
