Broad Bean, Potato & Bacon Hash with Mint Salsa 

Serves 4

Core Recipe

frylight
1 onion, finely chopped
130g lean back bacon, chopped
700g potatoes, peeled, boiled & diced
200g broad beans, fresh or defrosted from frozen and shelled

Mint Salsa:
large bunch mint, chopped
1 garlic clove, crushed
2 tbsp capers, rinsed
8 cocktail gherkins, roughly chopped
fat free french dressing

Heat a large pan and spray with frylight.  Fry the onion until soft, add the bacon and fry for 3-4 mins.  Add the potatoes and fry until golden.  Add the broad beans and heat through.  Season.

Meanwhile prepare the salsa.  Combine the ingredients  and mix well to form a chunky sauce.  Check seasoning. 

Remove hash from heat, stir in salsa.

Serve topped with a soft poached egg or an egg fried in frylight.
