Cabbage and Potato Casserole (Crock-pot)
2 tsp olive oil
2 med. onions, chopped
1 small cabbage, shredded
2 green apples, thin sliced
1-1/2 tsp white wine vinegar
1-1/2 tbls splenda
1 tsp salt
1/4 tsp pepper
2 c. chicken stock
1 small potato, peeled, cooked and mashed or
1/2 cup mashed potatoes
In large skillet, over med. heat, saute onion in spray oil until soft. In slow cooker, make alternate layers of cabbage and apple. Add the onion, vinegar, sugar, salt and pepper. Mix the broth into the mashed potatos to make a thin sauce and pour it over the cabbage. Cover and cook on high setting for 3-4 hours.
