Sweetcorn and Coriander fritters

cooking oil spray
4 eggs lightly beaten
1/2 red onion finely chopped
1 tsp mustard
310g can corn kernels drained and rinsed
2 large tomatoes thickly sliced
2Tbsp coriander leaves.
Use a balloon whisk to whisk together the eggs,onion,mustard,and corn in a large bowl until combined. season with salt and pepper
Spray a large non stick frying pan with spray oil and place over medium heat.
Drop 2Tbsp quantities of batter around edge of pan to form four fritters.
Cook for 1 minute or until golden underneath and bubbles appear on surface. Turn and cook for a further 1-2 minutes.
Transfer to a plate. Reheat pan and repeat with remaining batter to make 8 fritters in total.
Stack fritters with tomato on serving plates season with pepper and sprinke with coriander. Serve
