CHILLI RHUBARB SAUCE
I made this sauce up as I went along one day. I served it with
fresh tuna, plainly grilled, but it is also nice as a salad dressing if you
thin it out a bit.
250g rhubarb, lightly stewed
1 clove garlic, roughly chopped
1 red chilli, seeded and roughly chopped
½" piece fresh ginger, roughly chopped
Whizz the whole lot together in a liquidiser or blender, until
smooth. Add seasoning, sweetener, balsamic vinegar to taste. Chill
and serve.
