Chestnut and vegetable burgers
If you have 2 burgers, because of the chestnuts not being free, you would have to point 1.5pts for every 2 burgers.It's not too much though! Esp if you have with NC wedges!
126g cous cous
150ml double strength vegetable stock
1 onion, finely chopped
2 cloves garlic, crushed
1 courgette, grated
240g tin chestnuts, very finely chopped
1 egg, beaten
3 tbsp chopped fresh chives
1 tsp dried marjoram
1 tsp dried thyme
Place the couscous in a bowl,cover with stock and leave to stand for 15 minutes.
Meanwhile, fry the onion for 10 mins until beginning to soften.
Add the garlic, carrot and courgette, and cook for a further 5 mins.
mix together well all the ingredients, season well, then shape into 8 burgers.place under a med grill and cook for 15 mins, turning halfway!
