(Fried
aubergine slices)
Cut aubergine
into 1cm slices. Sprinkle with salt and leave 15 mins. Rinse and
pat dry. Mix the juice of 1 lemon with salt, pepper, 1 crushed garlic
clove and some chopped fresh parsley or coriander.
Deep fry the
aubergine slices for a minute or two until browned all over. Drain on
kitchen paper and serve, topped with the lemon juice mixture and a garnish of
fresh parsley or coriander.
